From the executive chef that brought you Japonessa, Billy Beach returns to his roots in this smaller, more relaxed Ballard sushi setting.


We do not take reservations but if you are worried about getting a seat, just give us a call 15-20 minutes before your expected arrival (30 minutes on Friday & Saturday recommended), and we can add you to the wait list right over the phone.

Billy Beach was born and raised in Okinawa, Japan where he began working in sushi restaurants as a teenager.  As a young man, Billy moved to Seattle to pursue his dream of playing major league baseball. 

When he arrived in Seattle, Billy was able to put his training in Japanese cuisine to work as a sushi chef at the popular I Love Sushi restaurant on South Lake Union. It turns out that baseball was not in Billy’s career path, but over the years he worked his way beyond the sushi counter and has become the driving force in many new, innovative Seattle restaurants.

Along the way, Shawn and Nellie Bohnert met Billy while dining at his sushi bar. They could see his potential and that he was not an ordinary chef; over the years they have followed Billy’s journey as he has shown Seattle and the world his creativity and innovation. From concepts like Umi Sake House and Wasabi Bistro, to his own restaurant Japonessa, Billy has become known for bringing fusion and flair to traditional Japanese cuisine. Today Billy, Shawn and Nellie are partners in Billy Beach Sushi & Bar.
